Our Stone Mill

A Mill with
a Journey of Its Own

Our stone mill made the long journey from Ukraine to Northern Alberta, carrying with it generations of milling tradition and craft.

At its heart are granite stones, each one hand-carved by skilled artisans. The patterns cut into the stone guide the grain through a slow, cool grind that preserves the full character of the wheat.

Unlike industrial steel rollers, these carved granite stones work gently, keeping the bran, germ, and endosperm together so the whole grain arrives in your flour, just as nature intended.

Modern Processing

The Loss of Whole Grain Nutrition

Most modern roller mills separate the wheat berry into parts. The bran and germ are removed to create refined white flour with a longer shelf life and consistent texture.

While efficient for mass production, this process removes much of the fibre, nutrients, and natural oils found in the whole grain.

Commercial farming practices have also shifted toward higher yields, often relying on chemical inputs that can reduce long-term soil health.

The Traditional Way

Stone Milling

In stone milling, the entire grain is gently ground between millstones in one continuous process. The bran, germ, and endosperm remain together, preserving fibre, nutrients, and natural oils.

The slower process also produces less heat than high-speed industrial milling, helping maintain the natural qualities of the grain.

The result is flour that reflects the fullness of the wheat berry, with deeper flavour and a closer connection to traditional food preparation.

Heritage Grain

The Heritage of
Red Fife Wheat

Red Fife wheat is one of Canada's most important heritage grains. Introduced in the mid-1800s, it became the backbone of prairie farming and helped establish wheat production across Western Canada.

Farmers valued Red Fife for its resilience, strong flavour, and excellent baking qualities. Its deep roots in Canadian agriculture make it a grain closely tied to the history of prairie communities.

Unlike many modern hybrid wheats bred primarily for yield and uniformity, Red Fife retains the character and nutritional integrity of traditional grain varieties.
